With regard to the wood purlins and glu-lam beams, have them
sand-blasted and measure the *good* material.  Use engineering
judgement as to whether they are salvageable.  Wood that looks very
badly charred is frequently charred only a fraction of an inch. 
(Charring acts as an insulator!)

With respect to concrete, spalling of embedded material usually
indicates that they expanded and popped the concrete off.  Also,
concrete takes on a non-reversable color change with different colors
for different heat ranges.  I don't have the reference at my finger
tips, but will try to get it for you and post it as soon as possible
if someone else doesn't.

Tap the concrete with a hammer to see if delamination is present.  No
delamination will return a "ping" --- delaminated concrete will return
a "thud."
