E-mail replies...how do you do that?

Hi List,

Okay, non-engineering question, but this has been bugging me because I do not know how to do this. Several of you reply
to e-mails and it gives this nice little reply-header, e.g.:

How do you do that? My guess is it is an automatic time/date/name function, and not manually typed.

I use MS OUTLOOK, but cannot see it as an option in OUTLOOK. I know AOL has this function, maybe it is unique to them?

TIA
