I have always wondered about open buildings in general in ASCE. Since the only roof they cover is monoslope, what about all of the other types of roofs?
That's  been one of my pet-peeves, too.
It comes down to the type of research that has been done, which in turn comes down to who pays for the research. A great deal of the research found in ASCE 7 Ch. 6 is from the Metal Building Manufacturers Association (MBMA) which goes a long way to explain why so much of the information in Chapter 6 relates directly to that type of building--and why there is a special "low-rise building" category, etc.
Apparently no one is sufficiently interested in investigating open buildings with various kinds of roofs, so the information doesn't exist, at least in ASCE 7.
