I like the mesquite, Gail.
 
After the contest, there can be a big barbeque.  Seriously though.  Would it do any good to prestress the wood assemby, like forcing it into curve while gluing it?

If you are looking for exotic woods www.woodfloorsonline.com  might give you some ideas.
 
For example,  mesquite.
 
Bamboo is also an option. Although technically a grass, the bamboo they use for wood floors is stonger than oak.  It is not the same species as what the pandas eat.
