RE: existing wood floor joist bending stress

If this is simply a removal and replacement of flooring, you can use the values from the original design.  If there is new construction involved (ie. adding framing for an opening), then you might consider checking the existing joists based on newer code values.

The best thing to do would be to remove one of the joists and do an actual load test and record the bending capacity.  The other numbers you mentioned are slightly arbitrary in reality.
